Pineapple Cowboy Candy

Sweet and spicy candied pineapple slices infused with a smoky heat. These Pineapple Cowboy Candies are a delightful treat perfect for snacking, garnishing, or adding a kick to your favorite dishes.

  • 1 large pineapple, peeled, cored, and sliced into 1/4-inch thick rounds
  • 1 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1/4 cup apple cider vinegar
  • 2 tablespoons chili powder
  • 1 tablespoon smoked paprika
  • 1 teaspoon cayenne pepper (or more, to taste)
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

  1. In a large, heavy-bottomed saucepan or Dutch oven, combine the granulated sugar, brown sugar, apple cider vinegar, chili powder, smoked paprika, cayenne pepper, garlic powder, and salt. Stir well to combine.
  2. Add the pineapple slices to the saucepan in a single layer. If necessary, work in batches.
  3. Bring the mixture to a simmer over medium heat, then reduce heat to low and cook for 1-1.5 hours, or until the pineapple slices are translucent and the syrup has thickened. Turn the pineapple slices occasionally to ensure even cooking.
  4. Carefully remove the pineapple slices from the syrup and place them on a wire rack to cool completely. The syrup will continue to thicken as it cools.
  5. Once cooled, store the Pineapple Cowboy Candy in an airtight container at room temperature for up to 2 weeks.

Notes

Drizzle the leftover syrup over ice cream, pancakes, or cocktails for an extra burst of flavor and heat.
