Sweet, spicy, and smoky, Pineapple Cowboy Candy is a surprisingly addictive snack. Candied pineapple slices are infused with chili powder and brown sugar for a flavor explosion you won’t forget!

Ingredients

Scale
  • 1 fresh pineapple, peeled, cored, and sliced into 1/4-inch thick rings
  • 1 cup light brown sugar, packed
  • 2 tablespoons chili powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 225°F (107°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine brown sugar, chili powder, smoked paprika, cayenne pepper (if using), and salt. Mix well.
  3. Dredge each pineapple slice in the sugar mixture, ensuring both sides are evenly coated.
  4. Arrange the coated pineapple slices in a single layer on the prepared baking sheet.
  5. Bake for 2-2.5 hours, flipping the pineapple slices halfway through, until they are caramelized and slightly translucent.
  6. Remove from oven and let cool completely on the baking sheet. The pineapple will firm up as it cools.
  7. Store in an airtight container at room temperature for up to a week.

Notes

Serve Pineapple Cowboy Candy as a snack, appetizer, or garnish for grilled meats. For a sweeter treat, drizzle with a little honey after baking.
