Roasted Chicken

A succulent and flavorful roasted chicken with crispy skin and tender meat, perfect for a comforting family dinner.

Ingredients

  • 1 whole chicken (about 4 lbs)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 2 tsp garlic powder
  • 1 tsp dried thyme
  • 1 lemon, halved
  • 4 garlic cloves, smashed
  • Fresh rosemary sprigs (optional)

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Remove giblets from the chicken and pat the chicken dry with paper towels.
  3. Rub olive oil all over the chicken, then season with salt, pepper, paprika, garlic powder, and dried thyme.
  4. Place the lemon halves, garlic cloves, and rosemary sprigs inside the chicken cavity.
  5. Truss the chicken legs with kitchen twine and place the chicken breast-side up in a roasting pan.
  6. Roast in the preheated oven for about 1 hour 15 minutes, or until the internal temperature reaches 165°F (74°C).
  7. Remove the chicken from the oven and let it rest for 10-15 minutes before carving.
  8. Serve warm with your favorite sides.

Notes

For extra crispy skin, baste the chicken with its own juices halfway through roasting and let it rest uncovered.
