Pollo Asado is a flavorful Mexican grilled chicken marinated in a blend of citrus juices and spices, delivering juicy and tender meat with a smoky char.

  • 4 chicken thighs (bone-in, skin-on)
  • 1/4 cup orange juice
  • 1/4 cup lime juice
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a large bowl, combine orange juice, lime juice, garlic, olive oil, cumin, oregano, paprika, chili powder, salt, and pepper.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill to medium-high heat.
  4. Remove chicken from marinade and place on the grill. Cook for 6-8 minutes per side or until internal temperature reaches 165°F (74°C) and juices run clear.
  5. Let the chicken rest for 5 minutes before serving.
  6. Garnish with fresh cilantro if desired and serve hot.

Notes

For extra flavor, serve Pollo Asado with warm corn tortillas and a side of grilled vegetables or fresh salsa.
