  • 1 cup unsalted butter, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon peppermint extract
  • 1/2 cup crushed peppermint candies or candy canes

Instructions

  1. Preheat oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter and powdered sugar until light and fluffy.
  3. Mix in vanilla and peppermint extracts until combined.
  4. Gradually add the flour and salt, mixing gently until a soft dough forms.
  5. Fold in crushed peppermint candies evenly throughout the dough.
  6. Roll dough into 1-inch balls and place them 2 inches apart on the prepared baking sheet.
  7. Press each ball lightly with the bottom of a glass or your fingers.
  8. Bake for 15-18 minutes, or until the edges are set but cookies are still pale.
  9. Remove from oven and allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra festive flair, lightly dust the cooled cookies with additional powdered sugar or drizzle with melted white chocolate.
