Ingredients

Scale
  • 1 cup (2 sticks) unsalted butter, melted
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • ¼ teaspoon salt
  • ½ teaspoon baking powder
  • 1 cup semi-sweet chocolate chips
  • 1 cup white chocolate chips
  • ½ cup crushed peppermint candies
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon peppermint extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together melted butter and sugar until well combined.
  3. Beat in eggs one at a time, then stir in vanilla extract and peppermint extract.
  4. In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Stir in the semi-sweet chocolate chips.
  7. Pour batter into the prepared baking pan and spread evenly.
  8. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  9. While the brownies are baking, melt the white chocolate chips with vegetable oil in the microwave, stirring every 30 seconds until smooth.
  10. Once the brownies are out of the oven, immediately spread the melted white chocolate evenly over the top.
  11. Sprinkle the crushed peppermint candies over the white chocolate.
  12. Let the brownies cool completely before cutting into squares.

Notes

For a richer flavor, use dark chocolate chips instead of semi-sweet. You can also add a swirl of peppermint frosting for extra peppermint flavor.
