  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups chopped pecans
  • 1/4 cup corn syrup
  • 1/4 cup honey

Instructions

  1. Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. In a small saucepan over medium heat, combine corn syrup, honey, and chopped pecans. Heat until blended and warm, then remove from heat.
  7. Roll the cookie dough into 1-inch balls and place them on the prepared baking sheets, spacing about 2 inches apart.
  8. Press a small indentation in the center of each ball with your thumb or the back of a spoon.
  9. Fill each indentation with a teaspoon of the pecan syrup mixture.
  10. Bake for 12-15 minutes or until edges are golden and cookies are set.
  11. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

For extra richness, drizzle melted chocolate over cooled cookies before serving.
