Orange Rosemary Roasted Chicken

This Orange Rosemary Roasted Chicken is a flavorful and aromatic dish combining juicy roasted chicken with fresh rosemary and zesty orange, perfect for a comforting dinner.

  • 1 whole chicken (about 4 pounds)
  • 2 oranges, zested and juiced
  • 3 sprigs fresh rosemary
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika
  • 1/4 cup chicken broth

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a small bowl, mix olive oil, orange zest, orange juice, minced garlic, salt, pepper, and paprika.
  3. Remove giblets from chicken and pat dry with paper towels.
  4. Place rosemary sprigs inside the chicken cavity.
  5. Rub the orange and herb mixture all over the chicken, making sure to coat under the skin as well.
  6. Place the chicken breast-side up on a roasting pan.
  7. Roast the chicken for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C), basting occasionally with pan juices and chicken broth.
  8. Remove from oven and let rest for 10 minutes before carving.

Notes

For extra crisp skin, let the chicken rest uncovered in the refrigerator for a few hours before roasting.
