one-pot red beans and rice

This classic one-pot red beans and rice recipe is a hearty and flavorful meal perfect for a weeknight dinner. It’s packed with savory spices, creamy beans, and fluffy rice, all cooked together in one pot for easy cleanup.

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 pound dried red kidney beans, rinsed
  • 8 cups chicken broth
  • 1 pound smoked sausage, sliced
  • 1 teaspoon Creole seasoning
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 1/2 cups long-grain rice
  • Salt and pepper to taste
  • Chopped green onions, for garnish

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper and cook until softened, about 5 minutes. Add the garlic and cook for 1 minute more.
  2. Add the red kidney beans, chicken broth, smoked sausage, Creole seasoning, thyme, and cayenne pepper (if using). Bring to a boil, then reduce heat and simmer for 1 1/2 to 2 hours, or until the beans are tender.
  3. Stir in the rice and bring back to a simmer. Cover and cook for 20-25 minutes, or until the rice is cooked through and the liquid is absorbed.
  4. Season with salt and pepper to taste.
  5. Garnish with chopped green onions and serve hot.

Notes

For a vegetarian version, omit the sausage and use vegetable broth. Serve with a dollop of sour cream or a sprinkle of hot sauce for extra flavor.
