This comforting One-Pot Lamb Kalya features tender lamb cooked in a rich yogurt and cream sauce infused with aromatic spices, perfect for a hearty and flavorful meal.

  • 1.5 lbs lamb shoulder, cut into cubes
  • 1 cup plain yogurt
  • 1/2 cup heavy cream
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 2 teaspoons coriander powder
  • 1 teaspoon cumin powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • 1 cinnamon stick
  • 3 green cardamom pods
  • 4 cloves
  • Salt to taste
  • Fresh cilantro, chopped, for garnish
  • 1 cup water

Instructions

  1. Heat oil in a large pot over medium heat. Add cinnamon, cardamom, and cloves; sauté until fragrant.
  2. Add chopped onions and cook until golden brown.
  3. Stir in garlic and ginger; cook for 1-2 minutes until aromatic.
  4. Add coriander, cumin, turmeric, red chili powder, and salt; cook spices for 1 minute.
  5. Add lamb cubes and sear until browned on all sides.
  6. Lower heat, add yogurt slowly while stirring to avoid curdling.
  7. Pour in water, cover, and simmer for 45 minutes to 1 hour until lamb is tender.
  8. Stir in heavy cream and garam masala; cook uncovered for another 5-10 minutes until sauce thickens slightly.
  9. Garnish with fresh cilantro and serve hot with rice or naan.

Notes

For extra richness, add a tablespoon of cashew paste with the cream or serve with a side of cucumber raita for a refreshing contrast.
