This No-Bake Pumpkin Cheesecake is a creamy, dreamy dessert perfect for fall! It’s incredibly easy to make and requires no oven time, making it ideal for any occasion.

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons unsalted butter, melted
  • 1/4 cup granulated sugar
  • 16 ounces cream cheese, softened
  • 1 1/2 cups pumpkin puree
  • 1 cup powdered sugar
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, whipped

Instructions

  1. In a medium bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Press into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat cream cheese until smooth. Add pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract. Beat until well combined.
  3. Gently fold in whipped cream.
  4. Pour filling over the graham cracker crust.
  5. Cover and refrigerate for at least 4 hours, or preferably overnight.
  6. Before serving, remove the cheesecake from the springform pan.

Notes

Garnish with whipped cream and a sprinkle of pumpkin pie spice for an extra festive touch. You can also add a drizzle of caramel sauce.
