No-Bake Coconut Balls with Cream Cheese

Delicious no-bake coconut balls made with creamy cream cheese and shredded coconut, perfect for a quick and easy dessert or snack.

  • 1 cup shredded unsweetened coconut
  • 4 oz cream cheese, softened
  • 2 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
  • Optional: extra shredded coconut for rolling

Instructions

  1. In a mixing bowl, combine the softened cream cheese, honey, and vanilla extract until smooth.
  2. Add the shredded coconut to the mixture and stir until well combined.
  3. Scoop tablespoon-sized portions and roll them into balls with your hands.
  4. If desired, roll each ball in additional shredded coconut to coat.
  5. Place the balls on a plate lined with parchment paper and refrigerate for at least 1 hour to firm up.
  6. Serve chilled and enjoy!

Notes

For a nutty twist, add chopped nuts or a few dark chocolate chips inside each ball before rolling.
