No Bake Classic Woolworth Cheesecake

A smooth and creamy no bake classic Woolworth cheesecake with a buttery biscuit crust, perfect for an easy and delicious dessert.

  • 200g digestive biscuits, crushed
  • 100g unsalted butter, melted
  • 400g cream cheese, softened
  • 395g sweetened condensed milk
  • 125ml lemon juice (freshly squeezed)
  • 1 teaspoon vanilla extract
  • Fresh berries or fruit, for garnish (optional)

Instructions

  1. Combine crushed digestive biscuits and melted butter in a bowl; press mixture firmly into the base of a 23cm springform pan to form an even crust. Chill in fridge for 15 minutes.
  2. In a large mixing bowl, beat cream cheese until smooth and creamy.
  3. Gradually add sweetened condensed milk, mixing until well combined.
  4. Stir in lemon juice and vanilla extract; continue mixing until the mixture thickens slightly.
  5. Pour the filling over the chilled biscuit base and smooth the top with a spatula.
  6. Cover the cheesecake and refrigerate for at least 4 hours or overnight until set.
  7. Before serving, garnish with fresh berries or fruit if desired. Slice and enjoy.

Notes

For an extra flavor boost, try adding a layer of fruit compote on top before chilling, or swirl in melted chocolate into the filling before setting.
