Mushroom Gruyere Pasta

Creamy and flavorful, Mushroom Gruyere Pasta combines sautéed mushrooms with nutty Gruyere cheese for a comforting Italian-inspired dish perfect for dinner.

  • 8 oz pasta (fettuccine or linguine)
  • 2 tbsp olive oil
  • 1 lb mixed mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup Gruyere cheese, shredded
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and sauté until golden brown, about 6-8 minutes.
  3. Add minced garlic to the skillet and cook for another 1-2 minutes until fragrant.
  4. Lower heat to medium, then stir in heavy cream and bring to a gentle simmer.
  5. Add Gruyere cheese and Parmesan, stirring continuously until melted and the sauce is smooth.
  6. Season with salt, black pepper, and red pepper flakes if using.
  7. Toss the cooked pasta in the mushroom cheese sauce until well coated.
  8. Garnish with fresh parsley and serve immediately.

Notes

For extra richness, add a splash of white wine when sautéing the mushrooms or top with toasted pine nuts for crunch.
