  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 12 Mint Oreos, chopped
  • 1/2 cup white chocolate chips
  • Optional: 1/4 teaspoon mint extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk together the melted butter and sugar until smooth and glossy.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla and optional mint extract.
  4. In a separate bowl, sift together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined.
  6. Fold in the chopped Mint Oreos and white chocolate chips gently.
  7. Pour the batter into the prepared baking dish and spread evenly.
  8. Bake for 25-30 minutes or until a toothpick inserted in the center comes out with a few moist crumbs.
  9. Let the brownies cool completely before cutting into squares and serving.

For an extra minty kick, drizzle melted white chocolate mixed with a few drops of mint extract over the cooled brownies before serving.
