Minestrone Soup

Minestrone Soup is a hearty and healthy Italian vegetable soup packed with fresh ingredients and beans, perfect for a comforting meal any time of the year.

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 zucchini, diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 cup small pasta (such as ditalini or elbow macaroni)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional, for serving)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and sauté until softened, about 3-4 minutes.
  2. Add carrots and celery and cook for another 5 minutes until vegetables start to soften.
  3. Stir in zucchini and green beans, cooking for 2 more minutes.
  4. Add the diced tomatoes (with juice), cannellini beans, vegetable broth, oregano, and basil. Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
  5. In a separate pot, cook pasta according to package instructions until al dente. Drain and set aside.
  6. Season the soup with salt and pepper to taste.
  7. To serve, add pasta to individual bowls and ladle hot soup over the pasta. Garnish with fresh parsley and grated Parmesan if desired.

Notes

For extra richness, add a splash of good-quality olive oil before serving or a squeeze of fresh lemon juice to brighten the flavors.
