  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Season chicken with Italian seasoning, salt, and pepper.
  2. Add chicken to the pot and cook until browned on all sides and cooked through, about 5-7 minutes. Remove chicken from the pot and set aside.
  3. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and sun-dried tomatoes and cook for 1 minute more.
  4. Pour in chicken broth and bring to a simmer.
  5. Reduce heat to low and stir in heavy cream and Parmesan cheese until cheese is melted and sauce is smooth.
  6. Add chicken back to the pot and simmer for 5 minutes to allow flavors to meld.
  7. Garnish with fresh basil and serve hot.

Notes

For an extra layer of flavor, add a pinch of red pepper flakes. Serve with crusty bread for dipping.
