Marinated Olives and Feta Cheese

A flavorful and easy-to-prepare appetizer featuring tangy marinated olives paired with creamy feta cheese, perfect for entertaining or a light snack.

  • 1 cup mixed olives (green, Kalamata, or your choice)
  • 150g feta cheese, cut into cubes
  • 2 cloves garlic, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1 tsp fresh thyme or rosemary, chopped
  • Freshly ground black pepper, to taste

Instructions

  1. In a clean jar or bowl, combine the mixed olives and feta cheese cubes.
  2. Add the sliced garlic, dried oregano, crushed red pepper flakes, and fresh herbs.
  3. Pour the olive oil and lemon juice over the olives and feta, gently tossing to coat evenly.
  4. Season with freshly ground black pepper to taste.
  5. Cover and refrigerate for at least 2 hours, preferably overnight, to allow the flavors to meld.
  6. Serve chilled or at room temperature as an appetizer or snack alongside crusty bread.

Notes

For extra flavor, add a few lemon zest strips or a splash of white wine vinegar. This dish pairs wonderfully with chilled white wine or a crisp rosé.
