Maple Roasted Parsnips with Thyme

Sweet and savory maple roasted parsnips infused with fresh thyme make a perfect, easy side dish for any meal.

Ingredients

  • 1 lb parsnips, peeled and cut into sticks
  • 2 tbsp pure maple syrup
  • 2 tbsp olive oil
  • 1 tsp fresh thyme leaves
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a large bowl, toss parsnips with olive oil, maple syrup, thyme, salt, and pepper until well coated.
  3. Spread the parsnips in a single layer on a baking sheet lined with parchment paper.
  4. Roast for 25-30 minutes, turning halfway through, until golden and tender.
  5. Remove from oven and serve warm, garnished with additional fresh thyme if desired.

Notes

For extra crispiness, finish the parsnips under the broiler for 1-2 minutes, watching carefully to prevent burning.
