  • 4 boneless, skinless chicken breasts
  • 2 large sweet potatoes, peeled and cubed
  • 2 tablespoons olive oil
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes with 1 tablespoon of olive oil, salt, and pepper. Spread in a single layer on a baking sheet.
  3. In a small bowl, whisk together maple syrup, Dijon mustard, apple cider vinegar, garlic powder, smoked paprika, salt, and pepper.
  4. Place chicken breasts in a separate bowl and pour half of the maple glaze over them, ensuring they are evenly coated.

  7. Drizzle the remaining maple glaze over the chicken and sweet potatoes during the last 5 minutes of baking.
