This creamy Macaroni Corn Casserole is a comforting side dish or light meal. It combines classic macaroni and cheese flavors with the sweetness of corn for a family-friendly dish.

  • 1 pound elbow macaroni
  • 1/2 cup butter, melted
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 4 cups shredded cheddar cheese
  • 1 (15 ounce) can creamed corn
  • 1 (15 ounce) can whole kernel corn, drained
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. Cook macaroni according to package directions. Drain and set aside.
  3. While macaroni is cooking, melt butter in a large saucepan over medium heat. Whisk in flour until smooth. Gradually whisk in milk until smooth. Bring to a simmer, stirring constantly.
  4. Reduce heat to low and simmer for 5 minutes, stirring occasionally, until slightly thickened.
  5. Remove from heat and stir in cheddar cheese until melted and smooth.
  6. Stir in creamed corn, whole kernel corn, salt, and pepper.
  7. Add cooked macaroni to the cheese sauce and stir to combine.
  8. Pour into a greased 9×13 inch baking dish.
  9. Bake for 20-25 minutes, or until golden brown and bubbly.
  10. Let stand for 10 minutes before serving.

Notes

For a richer flavor, use a combination of cheddar and Monterey Jack cheese. Garnish with chopped parsley for a fresh touch.
