Loaded Potato Meatloaf

This hearty Loaded Potato Meatloaf combines creamy mashed potatoes and savory ground beef with cheddar cheese, bacon, and green onions for a comforting and flavorful meal.

  • 1 lb ground beef
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 1/2 cup chopped green onions
  • 1/2 cup bread crumbs
  • 1 large egg
  • 1/4 cup ketchup
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup milk

Instructions

  1. Preheat oven to 375°F (190°C). Grease a loaf pan.
  2. In a large bowl, combine ground beef, bread crumbs, egg, garlic powder, salt, pepper, and milk. Mix until just combined.
  3. Fold in half of the shredded cheddar cheese, bacon bits, and green onions.
  4. Press the meat mixture evenly into the prepared loaf pan.
  5. Spread mashed potatoes evenly over the top of the meat mixture.
  6. Sprinkle remaining cheddar cheese, bacon, and green onions over the mashed potatoes.
  7. Bake for 45-50 minutes until the meatloaf is cooked through and cheese is melted and bubbly.
  8. Let rest 10 minutes before slicing and serving.

Notes

For extra flavor, drizzle some barbecue sauce on top before serving or add diced jalapeños to the meat mixture for a spicy kick.
