  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 2 tablespoons Limoncello liqueur
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • ½ cup powdered sugar (for dusting)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream the butter and granulated sugar until light and fluffy.
  4. Beat in the egg, Limoncello, lemon zest, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just incorporated.
  6. Roll dough into 1-inch balls and place 2 inches apart on the prepared baking sheet.
  7. Bake for 12-15 minutes, until edges are lightly golden.
  8. Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. Once cool, dust with powdered sugar before serving.

Notes

For an extra burst of lemon flavor, drizzle the cooled cookies with a simple lemon glaze made from powdered sugar and fresh lemon juice.
