Lemon Vinaigrette

A bright and zesty lemon vinaigrette that’s perfect for fresh salads or as a light marinade, combining vibrant citrus with a smooth olive oil base.

Ingredients

  • 1/4 cup fresh lemon juice
  • 1/2 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1 small garlic clove, minced
  • Salt and freshly ground black pepper, to taste

Instructions

  1. In a small bowl, whisk together lemon juice, Dijon mustard, honey, and minced garlic.
  2. Slowly drizzle in the olive oil while continuously whisking to emulsify.
  3. Season with salt and pepper to taste.
  4. Adjust sweetness or acidity by adding more honey or lemon juice if desired.
  5. Use immediately or refrigerate in a sealed container for up to one week. Whisk before each use.

Notes

For a spicy twist, add a pinch of red pepper flakes. This vinaigrette pairs beautifully with mixed greens, grilled vegetables, or as a marinade for chicken.
