Lemon Chicken Soup

Lemon Chicken Soup is a bright and comforting broth-based soup featuring tender chicken, fresh lemon juice, and aromatic herbs, perfect for a light yet satisfying meal.

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 4 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1/2 cup carrots, diced
  • 1/2 cup celery, diced
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook until translucent, about 3-4 minutes.
  2. Add minced garlic and sauté for another 1 minute until fragrant.
  3. Pour in chicken broth, then add carrots and celery. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 10 minutes.
  4. Add shredded chicken and cook until heated through, about 5 minutes.
  5. Stir in fresh lemon juice and lemon zest, then season with salt and pepper to taste.
  6. Remove from heat and stir in chopped parsley.
  7. Serve hot, garnished with additional parsley if desired.

Notes

For added richness, stir in a beaten egg slowly while whisking the hot soup to create a silky texture, similar to traditional avgolemono soup.
