Lemon Bread

This moist and zesty Lemon Bread is a delightful treat that balances bright citrus flavors with a tender crumb, perfect for breakfast or dessert.

  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 cup granulated sugar
  • 2 large eggs
  • ⅓ cup vegetable oil
  • ¼ cup plain yogurt
  • ¼ cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat sugar and eggs until pale and fluffy.
  4. Mix in the vegetable oil, yogurt, lemon juice, lemon zest, and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, stirring just until incorporated.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

For extra lemon flavor, glaze the cooled bread with a mix of powdered sugar and lemon juice before serving.
