Lasagna Soup

A hearty and comforting lasagna-inspired soup that layers classic Italian flavors into a cozy bowl, perfect for a satisfying meal any day of the week.

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 4 cups beef broth
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp red pepper flakes (optional)
  • 8 lasagna noodles, broken into bite-sized pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper, to taste
  • Fresh basil or parsley, chopped (for garnish)

Instructions

  1. In a large pot or Dutch oven, brown the ground beef over medium heat until fully cooked. Drain excess fat.
  2. Add diced onion and sauté until softened, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
  3. Pour in the crushed tomatoes and beef broth. Stir in dried basil, oregano, red pepper flakes, salt, and pepper. Bring to a simmer.
  4. Add the broken lasagna noodles and cook until tender, about 10-12 minutes, stirring occasionally to prevent sticking.
  5. Remove soup from heat and ladle into bowls. Top each serving with a dollop of ricotta cheese, a sprinkle of mozzarella, and Parmesan cheese.
  6. Garnish with fresh chopped basil or parsley. Serve hot and enjoy!

Notes

For a vegetarian version, substitute the ground beef with lentils or chopped mushrooms and use vegetable broth instead of beef broth.
