  • 1 tablespoon olive oil
  • 1 pound kielbasa sausage, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups potatoes, peeled and cubed
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup milk or cream
  • 2 tablespoons chopped fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add kielbasa sausage and cook until browned. Remove sausage from pot and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  3. Pour in chicken broth and add potatoes, thyme, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  4. Return the cooked kielbasa to the pot.
  5. Stir in milk or cream and heat through. Do not boil.
  6. Serve hot, garnished with fresh parsley.

Notes

For a richer flavor, use heavy cream instead of milk. You can also add shredded cheddar cheese to the soup before serving.
