  • 1 (9-inch) unbaked pie crust
  • 1 cup granulated sugar
  • 1/2 cup (1 stick) unsalted butter, melted
  • 3 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, combine sugar and melted butter. Mix well.
  3. Add the beaten eggs and vanilla extract to the sugar mixture and stir until smooth.
  4. Stir in the shredded coconut and chopped pecans until evenly distributed.
  5. Pour the filling into the unbaked pie crust.
  6. Bake for 45-55 minutes, or until the filling is set and the crust is golden brown.
  7. Let the pie cool completely before slicing and serving.
