4 jalapenos, halved and seeds removed
4 oz cream cheese, softened
1/2 cup shredded cheddar cheese
1 cup cooked quinoa
1/2 cup black beans, drained and rinsed
1 avocado, sliced
2 cups mixed salad greens
1/4 cup diced red bell pepper
1/4 cup corn kernels
1 tbsp olive oil
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
Preheat oven to 375°F (190°C).
In a bowl, mix softened cream cheese and shredded cheddar cheese until combined.
Stuff each jalapeno half with the cheese mixture.
Place stuffed jalapenos on a baking sheet and bake for 15 minutes, until cheese is melted and jalapenos are slightly softened.
In a large bowl, combine cooked quinoa, black beans, salad greens, red bell pepper, and corn kernels.
Drizzle olive oil over the quinoa mixture and season with salt and pepper; toss to combine.
Divide the quinoa mixture into bowls.
Top each bowl with baked jalapeno poppers, sliced avocado, and garnish with fresh cilantro.
