These Jalapeño Cheddar Protein Bagels combine spicy jalapeños and sharp cheddar for a flavorful, protein-packed breakfast treat paired perfectly with a refreshing Greek yogurt salsa.

  • 1 ½ cups whole wheat flour
  • 1 cup unflavored protein powder
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup shredded sharp cheddar cheese
  • 1 jalapeño, finely chopped (seeds removed for less heat)
  • 1 cup plain Greek yogurt
  • ½ cup diced tomatoes
  • 2 tbsp finely chopped red onion
  • 1 tbsp chopped fresh cilantro
  • 1 tsp lime juice
  • 1 egg (for egg wash)
  • Water as needed

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, protein powder, baking powder, and salt.
  3. Fold in the shredded cheddar cheese and chopped jalapeño until evenly distributed.
  4. Gradually add water and stir until a firm dough forms. Knead briefly on a floured surface.
  5. Divide dough into 6 equal parts and shape each into a ball. Poke a hole through the center of each to form bagels.
  6. Place bagels on the prepared baking sheet. Brush tops with beaten egg to promote browning.
  7. Bake for 20-25 minutes until golden brown and cooked through.
  8. Meanwhile, prepare the Greek yogurt salsa by mixing yogurt, diced tomatoes, red onion, cilantro, and lime juice in a bowl. Season with salt to taste.
  9. Serve warm bagels with a generous dollop of Greek yogurt salsa on top or on the side.

Notes

For extra zing, add a pinch of smoked paprika to the yogurt salsa or swap cheddar for pepper jack cheese for a spicier kick.
