This hearty Italian Sausage and Potato Soup is a comforting and flavorful meal, perfect for a chilly evening. Made with savory sausage, tender potatoes, and aromatic herbs, it’s a simple yet satisfying dish the whole family will love.

  • 1 pound Italian sausage, removed from casing
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups water
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 pounds Yukon Gold potatoes, peeled and cubed
  • 1 cup chopped kale or spinach (optional)
  • Grated Parmesan cheese, for garnish
  • Fresh parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the chopped onion and minced garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in the chicken broth and water. Stir in the Italian seasoning, salt, and pepper.
  4. Add the cubed potatoes to the pot. Bring the soup to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  5. If using, stir in the chopped kale or spinach during the last 5 minutes of cooking.
  6. Ladle the soup into bowls and garnish with grated Parmesan cheese and fresh parsley.
  7. Serve hot.

Notes

For a creamier soup, mash some of the potatoes before serving. You can also add a splash of heavy cream or half-and-half at the end.
