  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup ricotta cheese

  • 1 tablespoon orange zest
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
  2. In a medium bowl, whisk together almond flour, all-purpose flour, baking powder, and salt.
  3. In a large bowl, beat eggs and granulated sugar until light and fluffy.
  4. Add ricotta cheese, melted butter, vanilla extract, and orange zest to the egg mixture; mix until well combined.
  5. Gradually fold the dry ingredients into the wet ingredients until just combined.
  6. Pour batter into the prepared cake pan and smooth the top.
  7. Bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
  8. Remove from oven and allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  9. Dust with powdered sugar before serving, if desired.
