Rustic Irish Potato Pie

This Irish Potato Pie is a sweet and creamy dessert featuring a coconut and confectioners’ sugar topping that resembles small potatoes. It’s a fun and delicious treat perfect for St. Patrick’s Day or any occasion!

  • 1 (8 ounce) package cream cheese, softened
  • ½ cup butter, softened
  • 1 cup confectioners’ sugar
  • 4 cups mashed potatoes, cooked and cooled
  • 1 teaspoon vanilla extract
  • 3 ½ cups confectioners’ sugar, divided
  • 1 ½ cups sweetened shredded coconut
  • Ground cinnamon, for dusting

Instructions

  1. In a large bowl, beat together the cream cheese, butter, and 1 cup of confectioners’ sugar until smooth and creamy.
  2. Mix in the mashed potatoes and vanilla extract until well combined.
  3. Form the potato mixture into small, egg-shaped pieces.
  4. In a separate bowl, combine the remaining 3 ½ cups confectioners’ sugar and the shredded coconut.
  5. Roll each potato-shaped piece in the coconut mixture until fully coated.
  6. Place the coated “potatoes” on a baking sheet lined with parchment paper.
  7. Dust lightly with ground cinnamon.
  8. Refrigerate for at least 30 minutes before serving.

Notes

For an extra touch, add a drop of green food coloring to some of the coconut mixture for a speckled “potato” look.
