Huevos Rancheros is a traditional Mexican breakfast featuring fried eggs atop crispy tortillas with a fresh, flavorful tomato-chili sauce. This hearty dish combines vibrant ingredients for a satisfying start to the day.

Ingredients

  • 2 corn tortillas
  • 2 large eggs
  • 1 cup fresh salsa (tomato, onion, chili, cilantro)
  • 1/4 cup refried beans (optional)
  • 1/4 cup shredded cheddar or queso fresco
  • 1 tablespoon vegetable oil
  • Salt, to taste
  • Fresh cilantro leaves for garnish
  • 1/2 avocado, sliced (optional)
  • Hot sauce (optional)

Instructions

  1. Heat the oil in a skillet over medium heat. Fry the corn tortillas one at a time until crisp and lightly browned, about 1-2 minutes per side. Remove and drain on paper towels.
  2. In the same skillet, crack the eggs and cook until the whites are set but yolks remain runny, about 2-3 minutes. Season with salt.
  3. Warm the salsa gently in a small saucepan or microwave.
  4. If using, warm the refried beans in a small pan or microwave.
  5. To assemble, spread refried beans on each tortilla (optional), place a fried egg on top, then spoon warm salsa over the eggs.
  6. Sprinkle with cheese and garnish with fresh cilantro and avocado slices if desired.
  7. Serve immediately with hot sauce on the side.

Notes

For a spicier twist, add sliced jalapeños or a dash of chipotle powder to the salsa. Serve with a side of black beans or Mexican rice to make it a fuller meal.
