Hot Honey Mozzarella Eggs on Toast

  • 2 large eggs
  • 1 tablespoon olive oil
  • 2 ounces fresh mozzarella, torn into pieces
  • 1 tablespoon hot honey (or regular honey with a pinch of red pepper flakes)
  • Salt and pepper to taste
  • Optional: Fresh basil leaves, for garnish

Instructions

  1. Heat the olive oil in a non-stick skillet over medium heat.
  2. Crack the eggs into the skillet and cook to your desired doneness (sunny-side up, over easy, etc.). Season with salt and pepper.
  3. While the eggs are cooking, scatter the mozzarella pieces around the edges of the skillet.
  4. Drizzle the hot honey evenly over the eggs and mozzarella.
  5. Continue cooking until the mozzarella is melted and bubbly, about 1-2 minutes.
  6. Carefully remove the eggs from the skillet and transfer to a plate. Garnish with fresh basil, if desired, and serve immediately.

Notes

For an extra layer of flavor, add a sprinkle of Parmesan cheese before drizzling with hot honey. Serve with crusty bread for dipping.
