  • 1/2 cup uncooked short-grain rice
  • 2 cups milk (dairy or non-dairy)
  • 1/4 cup heavy cream (optional)
  • 1/4 cup granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla extract
  • 1/4 cup semi-sweet chocolate chips
  • Mini marshmallows (for topping, optional)
  • Chocolate shavings (for topping, optional)

Instructions

  1. In a medium saucepan, combine rice, milk, heavy cream (if using), sugar, cocoa powder, and salt.
  2. Bring the mixture to a simmer over medium heat, stirring occasionally to prevent sticking.
  3. Reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is tender and the mixture has thickened. Stir occasionally.
  4. Remove from heat and stir in vanilla extract and chocolate chips until melted and smooth.
  5. Divide the rice pudding into bowls and top with mini marshmallows and chocolate shavings, if desired.

Notes
