These Honey Sriracha Chicken Rice Bowls blend sweet and spicy flavors into a quick, satisfying meal perfect for busy weeknights.

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1/4 cup honey
  • 2 tbsp sriracha sauce
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 2 cups cooked jasmine rice
  • 1 tbsp vegetable oil
  • 1 cup shredded carrots
  • 1 cup steamed broccoli florets
  • 2 green onions, sliced
  • Sesame seeds for garnish

Instructions

  1. In a bowl, whisk together honey, sriracha, soy sauce, rice vinegar, garlic, and ginger to make the sauce.
  2. Heat vegetable oil in a large skillet over medium-high heat. Add chicken pieces and cook until browned and cooked through, about 6-8 minutes.
  3. Pour the sauce into the skillet with the chicken. Stir well and cook for an additional 2-3 minutes until the sauce thickens and coats the chicken.
  4. Prepare the rice bowls by dividing cooked jasmine rice among four bowls.
  5. Top the rice with the honey sriracha chicken, shredded carrots, and steamed broccoli.
  6. Garnish with sliced green onions and sesame seeds before serving.

Notes

For extra crunch and flavor, add sliced cucumbers or chopped peanuts as a topping.
