These homemade soft peanut butter cookies are melt-in-your-mouth delicious and incredibly easy to make. With a perfect balance of sweet and nutty flavors, they’re sure to become a family favorite.

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup creamy peanut butter
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • Granulated sugar, for rolling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract and peanut butter.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Roll the dough into 1-inch balls, then roll each ball in granulated sugar.
  7. Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  8. Flatten each cookie slightly with a fork, making a criss-cross pattern.
  9. Bake for 8-10 minutes, or until the edges are lightly golden brown.
  10. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, sprinkle a pinch of sea salt on top of the cookies before baking. Serve warm with a glass of milk!
