Lemon Vinaigrette Dressing

Brighten up any salad with this easy and refreshing homemade lemon vinaigrette. Made with fresh ingredients, it’s a simple dressing that adds a vibrant burst of flavor to your favorite greens or vegetables.

  • 1/2 cup extra virgin olive oil
  • 1/4 cup fresh lemon juice (from 1-2 lemons)
  • 1 tsp Dijon mustard
  • 1 tsp honey or maple syrup (optional, for a touch of sweetness)
  • 1 small garlic clove, minced (optional)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a small bowl or jar, combine the fresh lemon juice, Dijon mustard, honey (if using), minced garlic (if using), salt, and black pepper.
  2. Slowly drizzle in the extra virgin olive oil while continuously whisking or shaking vigorously until the dressing is well emulsified and creamy.
  3. Taste the vinaigrette and adjust seasonings as needed, adding more salt, pepper, or lemon juice to your preference.
  4. Serve immediately over your favorite salad, or transfer to an airtight container and refrigerate for up to one week. Shake well before each use.

Notes

For an herbier twist, finely chop 1 tablespoon of fresh parsley, dill, or chives and whisk them into the dressing. This versatile vinaigrette also makes a fantastic light marinade for chicken or fish.
