Golden Homemade Graham Crackers

  • 1 cup whole wheat flour
  • 1 cup packed brown sugar
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup (1 stick) cold unsalted butter, cut into cubes
  • ⅓ cup honey
  • ¼ cup milk
  • 2 tablespoons vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, whisk together the all-purpose flour, whole wheat flour, brown sugar, baking soda, and salt.
  3. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
  4. In a separate bowl, whisk together the honey, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until a dough forms.
  6. Turn the dough out onto a lightly floured surface and knead gently for a few seconds until it comes together.
  7. Divide the dough in half. Roll out one half to about ⅛-inch thickness.
  8. Cut the dough into desired shapes using a knife or cookie cutters.
  9. Place the crackers onto the prepared baking sheets.
  10. Bake for 12-15 minutes, or until golden brown.
  11. Let the crackers cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
  12. Repeat with the remaining dough.
