Homemade Cream Puffs

Delight in light and airy homemade cream puffs filled with a rich vanilla custard, perfect for an elegant dessert or special treat.

Ingredients

  • 1 cup water
  • 8 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 vanilla bean or 1 teaspoon vanilla extract
  • 4 large egg yolks
  • 1/4 cup cornstarch
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a saucepan, combine water, butter, and salt, and bring to a boil.
  3. Add flour all at once and stir vigorously until the mixture forms a ball and pulls away from the pan.
  4. Remove from heat and let cool for 5 minutes.
  5. Beat in eggs one at a time until dough is smooth and glossy.
  6. Drop spoonfuls of dough onto the prepared baking sheet shaping round puffs.
  7. Bake for 15 minutes at 425°F, then reduce the heat to 350°F (175°C) and bake for another 20 minutes until golden and puffed.
  8. While baking, prepare the vanilla custard: heat milk and scraped vanilla bean (or extract) until just boiling.
  9. Whisk sugar, egg yolks, and cornstarch until pale, then slowly whisk in hot milk.
  10. Return mixture to the stove and cook over medium heat, stirring constantly until thickened.
  11. Strain custard and cool completely.
  12. Once puffs are cooled, cut tops off or slice in half and pipe custard inside.
  13. Dust cream puffs with powdered sugar before serving.

Notes

For an extra touch, drizzle with melted chocolate or add fresh berries when serving.
