Hobo Casserole Ground Beef is a hearty, comforting one-dish meal featuring seasoned ground beef, potatoes, and cheesy goodness, perfect for an easy weeknight dinner.

  • 1 lb ground beef
  • 4 cups frozen diced potatoes
  • 1 can (10.5 oz) condensed cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1 small onion, finely chopped
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent.
  3. Add ground beef to the skillet and cook until browned. Drain excess fat.
  4. Stir in garlic powder, onion powder, salt, and pepper.
  5. In a large mixing bowl, combine cooked ground beef mixture, frozen diced potatoes, cream of mushroom soup, and sour cream. Mix well.
  6. Transfer the mixture into a greased 9×13 inch baking dish and spread evenly.
  7. Sprinkle shredded cheddar cheese evenly on top.
  8. Bake in preheated oven for 30-35 minutes until cheese is melted and bubbly and potatoes are tender.
  9. Remove from oven and let cool slightly before serving.

Notes

For extra flavor, try adding a sprinkle of smoked paprika or top with chopped green onions before serving.
