  • 1 lb ground beef
  • 1 cup salsa
  • 8 small corn tortillas
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onions
  • 1 clove garlic, minced
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • Cooking oil spray or 1 tbsp oil

Instructions

  1. Heat a skillet over medium heat and add a little oil.
  2. Sauté chopped onions and minced garlic until fragrant and translucent.
  3. Add ground beef, breaking it apart, and cook until browned and cooked through.
  4. Season with cumin, chili powder, salt, and pepper; stir well.
  5. Mix in salsa and cook for an additional 2 minutes until heated through.
  6. Warm the corn tortillas slightly to make them pliable.
  7. Place a spoonful of the beef mixture onto each tortilla, top with shredded cheese, and roll up tightly.
  8. Optionally, place roll ups seam side down in the skillet and cook for 2 minutes per side until golden and cheese is melted.
  9. Serve warm with extra salsa or sour cream if desired.

Notes

For extra flavor, add diced jalapeños to the beef mixture or serve with guacamole alongside for a tasty twist.
