Ground Beef Enchiladas

These Ground Beef Enchiladas are a savory and comforting Mexican classic, filled with seasoned beef and cheese, then baked in a rich enchilada sauce for a flavorful family favorite.

  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 2 tbsp vegetable oil
  • Fresh cilantro, chopped (optional, for garnish)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic; sauté until soft and fragrant, about 3 minutes.
  3. Add the ground beef to the skillet. Cook until browned, breaking it up with a spatula.
  4. Season the beef with cumin, chili powder, paprika, salt, and pepper. Stir well to combine.
  5. Add half of the enchilada sauce to the meat mixture and stir to coat. Remove from heat.
  6. Pour a thin layer of enchilada sauce in the bottom of a baking dish.
  7. Warm the tortillas to make them pliable. Spoon the beef mixture evenly onto each tortilla, sprinkle with cheese, then roll up and place seam-side down in the baking dish.
  8. Pour the remaining enchilada sauce over the rolled tortillas, then sprinkle the remaining cheese on top.
  9. Bake in the preheated oven for 20 minutes or until the cheese is melted and bubbly.
  10. Garnish with fresh cilantro if desired, and serve hot.

Notes

For a spicier kick, add diced jalapeños to the beef mixture or top with hot sauce before serving.
