Gourmet Mascarpone Strawberry Grilled Cheese with Balsamic Glaze

A deliciously creamy and fruity twist on the classic grilled cheese, featuring mascarpone cheese, fresh strawberries, and a tangy balsamic glaze.

  • 4 slices of rustic white bread
  • 1/2 cup mascarpone cheese
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons unsalted butter
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • Handful fresh basil leaves (optional)

Instructions

  1. In a small saucepan, combine balsamic vinegar and honey. Simmer over medium heat until reduced to a thick glaze, about 8-10 minutes. Remove and set aside.
  2. Spread mascarpone cheese evenly on two slices of bread.
  3. Top mascarpone with sliced strawberries and fresh basil leaves, if using.
  4. Cover each sandwich with the remaining bread slices.
  5. Heat a skillet over medium heat and melt butter.
  6. Place sandwiches in skillet and grill until bread is golden brown and cheese is warmed through, about 3-4 minutes per side.
  7. Remove from heat and drizzle with balsamic glaze before serving.

Notes

For an extra crunch, add crushed pistachios inside the sandwich before grilling, or serve with a side of arugula salad tossed in lemon vinaigrette.
