  • 1 pound mini sweet peppers, assorted colors
  • 4 ounces goat cheese, softened
  • 2 tablespoons olive oil
  • 1 tablespoon fresh thyme leaves
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Wash and dry the mini peppers. Cut each pepper in half lengthwise and remove the seeds.
  3. In a small bowl, combine the softened goat cheese, olive oil, thyme leaves, black pepper, and red pepper flakes (if using). Mix until well combined.
  4. Spoon the goat cheese mixture into each pepper half, filling them generously.
  5. Place the stuffed peppers on a baking sheet.
  6. Bake for 12-15 minutes, or until the peppers are slightly softened and the cheese is warmed through.
  7. Let cool slightly before serving.
