500g potato gnocchi
2 tablespoons olive oil
3 cloves garlic, minced
200g fresh spinach
150g feta cheese, crumbled
Salt and pepper, to taste
1/4 teaspoon red pepper flakes (optional)
Freshly grated Parmesan cheese, for serving (optional)
Instructions
Bring a large pot of salted water to a boil. Cook the gnocchi according to package instructions until they float to the surface, about 2-3 minutes. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Add the fresh spinach to the skillet and cook until wilted, about 3-4 minutes. Season with salt, pepper, and red pepper flakes if using.
Add the cooked gnocchi to the skillet and gently toss to combine with the spinach and garlic.
Remove the skillet from heat and stir in the crumbled feta cheese until evenly distributed.
Serve warm, optionally sprinkling with freshly grated Parmesan cheese.

For an extra creamy texture, add a splash of cream or a dollop of ricotta cheese before serving.
