Ingredients

  • 2 tablespoons vegetable oil
  • 4 cloves garlic, minced
  • 2-inch piece fresh ginger, peeled and sliced
  • 4 scallions, white and green parts separated, sliced
  • 6 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 200g egg noodles
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • Salt and pepper, to taste
  • Fresh cilantro or parsley for garnish (optional)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add garlic, ginger, and the white parts of the scallions and sauté for 2-3 minutes until fragrant.
  2. Pour in the chicken broth and bring to a boil.
  3. Add the egg noodles and cook according to package instructions until tender.
  4. Stir in the shredded chicken, soy sauce, and sesame oil. Simmer for 5 minutes to heat through.
  5. Season with salt and pepper to taste.
  6. Serve hot, garnished with the green parts of the scallions and fresh cilantro if desired.

Notes

For extra depth, add a splash of lime juice or a pinch of chili flakes before serving to brighten and spice up the soup.
