Georgia cracker salad

Georgia cracker salad is a classic Southern no-cook dish featuring fresh vegetables and crispy crackers tossed in a creamy dressing, perfect as a light side or snack.

  • 1 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon celery seed
  • 2 cups diced cucumbers, peeled and seeded
  • 1 cup diced tomatoes
  • 1 cup diced bell peppers (green or red)
  • 1/2 cup diced onions
  • 2 cups broken saltine crackers

Instructions

  1. In a large mixing bowl, combine mayonnaise, apple cider vinegar, sugar, salt, black pepper, and celery seed. Mix well until smooth.
  2. Add the diced cucumbers, tomatoes, bell peppers, and onions to the dressing. Stir gently to combine all ingredients evenly.
  3. Just before serving, fold in the broken saltine crackers to keep them crunchy.
  4. Refrigerate the salad for at least 30 minutes to let the flavors meld.
  5. Serve chilled as a refreshing side dish or snack.

Notes

For extra crunch, add the crackers just before serving to prevent them from becoming soggy.
